1 vanilla pod

225g/8oz sugar

strawberries, to serve


Place the vanilla pod and sugar into a blender and blend until smooth.

Sieve, and blend again.

Repeat the process until the mixture is very fine.

Transfer to a sealable container and it will keep as long as you like.

To serve with strawberries, sprinkle the vanilla sugar over the strawberries and allow to rest for 15 minutes before serving.
