Ingredients


350g gluten free penne pasta

2 tbsp olive oil

4 tomatoes, chopped

8 rashers smoked back bacon, chopped

250g spinach

Shaved Parmesan - optional













Method


Cook the gluten free  pasta following pack instructions. Meanwhile, heat the oil in a large frying pan, then add the bacon, and cook through.

Stir in the tomatoes, followed by the spinach to wilt. Drain the gluten free pasta and add to the bacon, tomatoes and spinach.

Grate over the parmesan, then serve.
