6 medium carrots, peeled, grated (see tip)

1 orange, zest and juice

4 tbsp olive oil

1 tsp caster sugar (depending on the sweetness of the orange juice - omit if the juice is sweet enough)

1 tsp poppy seeds


Put all of the ingredients in a bowl, season with salt and pepper and mix well.
