3-4 tbsp mayonnaise
2 tbsp low FODMAP pesto
3 cooked skinless chicken breast, shredded
3 tomatoes, sliced
12 slices gluten free bread, toasted
Mix the mayonnaise and pesto together in a bowl. Gently stir in the shredded chicken.
Make the sandwiches, with the toasted gluten free bread, the chicken mixture, tomatoes and top with some rocket.
