Ingredients


85g bundle rice noodles

drizzle of sesame oil

½ fresh pineapple, peeled cored and diced

1 small carrot

1 red pepper, sliced

½ red chili

1 tbsp chopped coriander

1 tbsp toasted sesame seeds

handful shredded cooked chicken

For the dressing

1 tsp curry powder - click here

3 tbsp mayo







Method

 

To make the dressing simply which the curry powder into the mayo.

Mix through the carrots, peppers, chili, chicken and pineapple, then set aside.

Cook the noodles according to packet instructions, drain well, then toss with a drizzle sesame oil.

Top the noodles with the chicken mix, then sprinkle over the coriander.
