200g/7oz crayfish, cooked

¼ cucumber, cut into batons

1 tbsp gluten free soy sauce

1 tbsp maple syrup

1 tsp sesame oil

1 scallion, chopped green end only

4 radish, finely sliced

6 Little Gem lettuce leaves

3 lime wedges, to garnish


Place the crayfish, gluten free soy sauce, maple syrup, sesame oil and scallion into a pan and heat gently for 4-5 minutes.

To serve, place the lettuce leaves onto a plate, pour over the crayfish mixture and garnish with, radish, cucumber and lime wedges.
