4 lamb cutlets

2 tsp wholegrain mustard

30g/1oz gluten free breadcrumbs

2 tbsp grated parmesan

2 tbsp fresh thyme leaves

oil for frying


Preheat the grill to a high heat. Massage the lamb cutlets with the mustard.

On a plate combine the gluten free breadcrumbs, parmesan and thyme.

Take the cutlets and roll in the gluten free breadcrumb mix so that it is evenly covered.

Grill the steak for six minutes on each side. Serve.
