8oz gluten free self raising white flour
2oz lactose free margarine
1oz caster sugar
2.5 oz sultanas
splash of lactose free/rice milk
Measure flour into a bowl, add the margarine and rub together until it resembles fine breadcrumbs.
Add the caster sugar and the fruit.
Add the egg and stir, add enough milk/soya to bind together but not too much as it will be hard to roll out.
If you want to roll out with a rolling pin put clingfilm on a board to place the mixture on and also on top of the mixture and roll out between the clingfilm.
Cut out the scones with a small cutter. Makes between 8-12 depending on how big you want them to be.
Cook at gas 7 for 10 minutes but check, smaller scones may only need 7 minutes. Whatever size check after 7 minutes.
