For the salmon

100g/3½oz salmon fillet, skin removed

1 tsp caster sugar

½ lemon, juice only

small handful fresh dill, finely chopped

drizzle olive oil

For the herb salad

small handful each fresh chives, parsley, basil, mint, chopped

1 bag mixed leaf salad

squeeze lemon juice

1 tbsp extra virgin olive oil


Put all the salmon ingredients into a bowl and stir to coat to salmon well. Cover with cling film and leave to marinate for ten minutes. Slice thinly.

To make the herb salad, put the herbs and leaves into a large bowl and squeeze over the lemon juice and olive oil. Mix until the herbs are well coated.

To serve, put the herb salad on a plate and top with the slices of marinated salmon.
