Ingredients


4 chicken breasts or 8 chicken thighs

1 tbsp olive oil

250g tomatoes

4 tbsp low FODMAP pesto - click here

100g olives

300g cooked new potatoes

Fresh rosemary to garnish - optional













Method


Put the chicken breasts and new potatoes in a large, shallow roasting tray and drizzle with olive oil.

Grill for 10 mins, then add olives and tomatoes. Grill for another 5 mins until chicken is cooked. Drizzle pesto over the top and serve.
