For the papaya mousse

1 papaya, peeled and de-seeded

150ml/5fl oz lactose free double cream

1 vanilla pod, seeds only

1 lime, zest and juice

1 tbsp icing sugar if necessary


For the mousse, place the papaya flesh and lime juice into a blender and blend to a purée. Check for sweetness, add sugar if necessary.

Whip the lactose free cream together with the vanilla seeds until stiff peaks form when the whisk is removed. Fold in the puréed papaya, top with lime zest and chill.
