IBS Sano - Low FODMAP Recipes - Logo Background Gluten & lactose free and Low FODMAP Recipe - Pineapple & passion fruit fool


2 small sweet pineapple, peeled, cored and diced

6 passion fruits, halved*

1 x 150g/5oz tub lactose free yogurt

1 x 150g/5oz tub lactose free double cream

juice 1 lime

*If the passion fruit are very acidic, simply sweeten with icing sugar.


Peel, core and dice the pineapple and set aside. Squeeze out the seeds from 2 of the passion fruit halves. Add lime juice to taste.

Whisk the lactose free cream until thick, then fold through the lactose free yogurt.  Gradually whisk in the passion fruit and lime juice.

In the bottom of a suitable glass or dish, place some of the diced pineapple.

Add a layer of passion fruit, then top with some more of the lactose free cream/yogurt mix.

Cover and chill for 30 mins before eating. Scoop the seeds from the remaining passion fruit over the top of the fools to serve.
