1 escalope of pork

1 egg, beaten

50g/1¾oz oats

50g/1¾oz gluten free breadcrumbs

2 tbsp olive oil

Cranberry Sauce to serve


Mix the egg, oats and gluten free breadcrumbs together in a bowl. Dip the pork in the mixture to coat.

Heat one tablespoon of the olive oil in a pan and fry the pork for 4-5 minutes on each side, or until golden brown.

Serve the pork with cranberry sauce and vegetables.
