For the chicken
½ lime, juice only
1 tbsp garlic infused oil
1 tbsp gluten free soy sauce
250g/9oz chicken breast, skinned and cut into thin slices lengthways
1 tbsp groundnut oil
2 tbsp maple or golden syrup
2 tbsp sesame seeds
For the dressing
1 tbsp sesame oil
200g roasted capsicum from a jar - cut into strips
For the chicken, mix the lime juice, garlic infused oil and soy in a large bowl. Toss the chicken in the sauce.
Heat the oil in a frying pan and add the chicken slices. Fry for 2-3 minutes, then add the syrup and sesame seeds.
Fry for about five minutes, or until the chicken is cooked through.
For the dressing, mix together the garlic oil, sesame oil, Tabasco and soy. Add the capsicum, spinach leaves and toss together.
To serve, spread the dressed spinach and capsicum over a plate and arrange the chicken on top.
