250g pack thick rice noodles
Half fresh pineapple diced
200g peeled shrimp
bunch scallion,sliced green ends only
20g pack cilantro,chopped
For the dressing
1 tbsp light muscovado sugar
1 tsp sesame oil
1 red chili chopped
2 limes, juiced
Prepare noodles,according to packet instructions, then drain and cool under cold running water. Drain well.
Halve the pineapple, then peel each half and chop the flesh.
Mix with the noodles, shrimp, scallions and cilantro.
For the dressing, mix together the sesame oil, sugar and chili, then stir in the lime juice.
Add to the salad and toss well.
