Low FODMAP and Gluten Free Recipe - Spicy tuna & cheese potato

Ingredients


225g can tuna, drained

1 red chili, chopped

1 roasted red pepper, sliced (from a jar)

½ tsp paprika

1 tbsp garlic infused oil

1 tbsp olive oil

1 scallion, sliced green end only

handful chopped tomatoes

½ small bunch chives, chopped

1 medium-sized jacket potato

150g lactose free grated cheese





Method


Preheat the oven to 180C/Gas 4/fan oven 160C. Prick the potato several times with a fork and put it straight onto a shelf in the hottest part of the oven.

Bake for approximately 1 hour, or until it is soft inside.

Mix tuna with garlic infused oil, olive oil, paprika, tomatoes, pepper and chives. Split jacket potato and fill with the tuna mix and lactose free cheese.

Pop back into the oven until the cheese has melted, then top with the chopped scallions and chili.
