Ingredients


large knob of lactose free butter

1 tbsp brown sugar

1kg carrots, sliced













Method


Boil or steam the carrots for 15-20 mins until very tender. Melt the lactose free butter in a large frying pan with the sugar.

Drain the carrots well and return to the pan with the lactose free butter and sugar. Using a hand blender or food processor, whizz to make a smooth purée.
