Ingredients


For the rice pudding

300ml/½ pint lactose free whole milk

200g/7oz long grain rice

1 vanilla pod

1 orange, juice only

50ml/2fl oz maple syrup

50ml/2fl oz lactose free double cream

To serve

1 orange, segmented

drizzle maple syrup

drizzle lactose free double cream







Method


For the rice pudding, heat the lactose free milk in a saucepan and when it is coming to the boil, add the rice and cook for five minutes.

Split the vanilla pod lengthways and scrape out the seeds.

Add them to the pan along with the orange juice, maple syrup and lactose free cream and continue to cook until the rice is tender and cooked through.

Serve in a bowl garnished with orange segments, more maple syrup and lactose free cream drizzled over the top.
