For the salad

3 tbsp olive oil

2 slices parma ham, chopped

½ cucumber, cubed

handful fresh parsley

handful fresh basil

50g/2oz Brie

2 slices turkey, chopped

For the dressing

3 tbsp cranberry sauce

1 tbsp balsamic vinegar


For the dressing, place all of the dressing ingredients into a small food processor and blend until smooth.

To serve, place the parsley and basil onto a plate, top with the brie, parma ham and turkey and pour over the dressing.
