Ingredients


4 boneless, skinless chicken breasts, cut into bite-size pieces

knob of lactose free butter

100g spinach

100g ham, torn

100ml lactose free cream

1 tbsp chopped chives

50g gluten free breadcrumbs

50g gluten free bread cut into small cubes

150g grated lactose free cheddar cheese






Method


Heat grill to medium. Spread the chicken out evenly in a shallow baking dish.

Dot with half the lactose free butter and grill for 7-10 mins, turning occasionally until cooked through.

Meanwhile, put the spinach in a bowl and pour a kettle of boiling water over them. Leave for 2-3 mins, then drain.

Scatter the spinach and ham over the chicken, dollop on the lactose free cream and season to taste.

Sprinkle on the gluten free breadcrumbs, gluten free bread cubes, then dot with remaining lactose free butter, then slide under the grill for 5 mins more until heated through and the topping is crisp.

Finally sprinkle on the lactose free cheddar and chives then pop under the grill until melted and golden.  Serve with green salad.
