800g potatoes, cut into cubes
1 tbsp olive oil
1 tbsp garlic infused oil
½ tsp mild chili powder
½ tsp paprika
1 tsp cumin
½ tsp cayenne pepper
1 tbsp chopped chives
Lactose free soured cream, to serve
Boil the potatoes for 5 mins. Meanwhile, heat the oil in a frying pan and gently fry spices for 2 mins.
Drain the potatoes and tip into the spice mix. Turn up the heat and shake the potatoes around so that they are all covered.
Cook for 10 mins more until tender then add the chives and stir through.
Serve with lactose free soured cream, sprinkled with a little cayenne.
