50g unsalted lactose/dairy free butter, plus extra for greasing
100g light, soft brown sugar, plus 4 tbsp extra
200ml lactose/dairy free whipping cream
Drop vanilla essence
Smear some lactose free butter around the inside of 1lt/2pt oven proof pudding dish.
Dust the cornflour over the buttered dish.
Beat together the lactose free butter and brown sugar in a mixing bowl.
Beat in the egg then the treacle, flour and lastly the bicarbonate of soda and allow to bubble.
Pour the mixture into the dish.
Bake in a pre heated oven for 25 minutes.
For the sauce, Melt the lactose free butter in a saucepan, then add sugar, lactose free cream, vanilla and a good pinch salt. When sugar is melted, bubble for 1 min until it looks like a sauce. Pour 200ml into a jug for serving.
