300ml/10½fl oz vegetable oil, for deep frying

50g/1¾oz gluten free plain flour

2 free-range eggs, beaten

100g/3½oz gluten free white breadcrumbs

115g/4oz brie, cut into cubes

85g/3oz ready-made cranberry sauce


Place the vegetable oil into a deep, heavy-bottomed saucepan and heat until a small cube of bread sizzles and turns golden when dropped into it. (CAUTION: hot oil can be dangerous. Do not leave unattended.)

Place the gluten free flour onto a plate, the beaten egg into a bowl and the gluten free breadcrumbs onto another plate.

Dip each wedge of brie first in the gluten free plain flour, then in the beaten egg and finally in the gluten free breadcrumbs, shaking off the excess between each stage.

Carefully place the brie wedges into the hot oil and deep fry for 4-5 minutes, or until golden-brown. Remove the wedges from the oil with a slotted spoon and drain on kitchen paper.

To serve, place the deep-fried brie wedges onto a serving plate along with a small bowl of cranberry sauce.
