1tbsp sunflower oil

500g (1lb 2oz) lean pork mince

1tbsp fish sauce

Zest and juice of 1 lime, plus lime wedges to garnish

1-2 red chilies, deseeded and finely chopped

½tbsp soft brown sugar

Large handful each fresh cilantro and mint leaves, roughly chopped

To Serve

2 little gem lettuces, leaves separated

Diced cucumber and red pepper (optional)

Scallions - green part only (optional)


Heat the oil in a wok or frying pan.

Add pork and cook over high heat for 5-8min until browned and cooked through. Set aside.

In a large serving bowl, mix together the fish sauce, lime zest and juice, chilies, brown sugar .

Stir in the pork and most of the cilantro and mint. Check the seasoning.

Take the pork mixture, lettuce leaves, reserved herbs and lime wedges to the table and let people dig in.

Garnish with cucucmber, peppers and scallions (optional).
